Eggplant polpette are mostly found in Sicily & Calabria, which is located in the toe of the boot of Italy. Like most foods, depending what region you’re in, the recipe will change slightly. In Sicily they add raisins & pinoli, in some parts of Calabria a piece of caciocavallo cheese is tucked in the middle.
In Diva’s Version, I did a combination. I added the pine nuts & raisins to the eggplant then stuffed them with a filling of ricotta, pecorino & mozzarella. These were so good. Since eggplant is one of my husbands favorite foods, needless to say he ate most of them. If I got his approval, I know they are good.
