Eggplant & Zucchini Parmesan

This past July, J (my husband) & I were in Milan. He was already there on a business trip & I flew in to meet him. By the time I arrived at the hotel, it was just about lunch time.
When I travel to Milan, I always have my first meal in the hotel restaurant, where we often stay.
The food is consistently good & better than the food, they have one of my favorite white wines; Planeta Chardonnay (from Sicily), which isn’t easy to find.

I have a little ritual that I do when I first get to Milan. I always have a glass or 2 or 3 of wine, eat a huge plate of spaghetti pomodoro & then I take a nap. (If I didn’t nap, I would surely turn into a DIVA.)
This particular time, when I got to the hotel, I was famished. I can’t believe that not one airline (at least the ones I’ve flown on) can’t provide decent food. I did learn to order the vegetarian meal, this way you don’t have to eat the unidentifiable meat they serve. Anyway, When I sat down, I was so hungry that I couldn’t focus on anything our server was saying. All I remember was that I said yes to the first thing that he suggested.

About 10 minutes & a basket full of bread later, he brought out this bubbling hot, gooey, cheesy, saucy, baking dish that smelled like pure love! It was eggplant-zucchini parmesan.
I grabbed a hunk of bread (off J’s plate) & went right to work; and I worked hard. I ate every last morsel & sopped up every drop of sauce. I left no prisoners behind. At that moment, I was perfectly content & ready for my nap. I think I may have a new ritual.
