
A few weeks ago my husband John & I went to a restaurant in NYC called “Parm”. Right now this is one of New York’s hot spots. It’s a small place with a long counter & about 8 tables in the back. They don’t take reservations so you have to wait forever to sit. This place is so well loved, that people don’t mind waiting, as we did.
One of the first things we ordered, when we finally sat was cherry pepper poppers. They were hot peppers stuffed with pork that was in a bechamel sauce. Honestly, I couldn’t taste the filling but I loved the contrast of the vinegar from the pepper & the crunchy fried coating. I couldn’t wait to try to make these balls of goodness for myself.
In my version I used the hot cherry peppers because I love spicy food, but my stuffing is different. I browned some loose sausage & chopped some fresh mozzarella & basil. I chopped the cheese thinking that it would melt better since they fry up so quickly. I then stuffed & rolled them in egg, flour & panko crumbs. I fried them until they were beautifully golden. These are now one of my new favorite things. Try them!!
