Peperoni Ammollicati (sauteed peppers w/ capers, pecorino & breadcrumbs)

PEPERONI AMMOLLICATI
serves 4

4 different colored bell peppers
3 Tbsp.homemade bradcrumbs (made from stale bread)
4 Tbsp. grated pecorino cheese
1 Tbsp. capers
1/2 tsp. oregano
2 Tbsp. extra virgin olive oil
salt to taste
1/4 tsp. red seed pepper (optional)

Remove the stems, seeds, & the white inside the peppers. Cut the them into 1/4-1/2 inch strips. Heat the oil in a large fry pan & saute the peppers. Be careful not to char or over cook them. Saute them for about 15 minutes on medium heat, or until fork tender.
Add the caper, oregano, & cheese, then mix well. Taste for salt. Just before serving, add the bread crumbs. Toss lightly. This can be served warm or at room temperature.
