Pepperoni, Potatoes & String Beans

PEPPERONI,POTATOES & STRING BEANS
serves 3-4 side dish

1 stick of pepperoni, peel skin off & cut into 1 inch rounds
1 lb. of small red new potatoes, cut in half
1/2 lb. string beans, trimmed & cut in 1/2
1 Tbsp. parsley, chopped
salt & pepper to take
1 Tbsp. olive oil.

Fill a medium pot with water & bring to a boil. Add potatoes & cook until almost soft. Add the beans to the same water (no need to change or dirty 2 pots) & cook until both potatoes & beans can be pieced with a fork easily. Drain & set aside.

In a medium size pot heat one 1 Tbsp. olive oil. Place the pepperoni in the oil & render the flavor for about 10 minutes on medium heat. You don’t want to fry it just render it so be carful of that the heat isn’t too high.

Place the veggies in the pot with the pepperoni & cook for another 15 minutes. Add salt, pepper & parsley to taste. Give it a good stir & serve.
My mother would put some water at the bottom of the pot & let everything cook for about 30 minutes. She did this to create a little sauce & the potatoes would breakdown somewhat.
