Cherry Pepper Poppers Stuffed w/ Sausage & Mozzarella

CHERRY PEPPER POPPERS
makes (1) 16 oz. jar

1 (16 oz.) jar ht cherry peppers or sweet peppers
1 link of sausage, casing removed & broken up & browned
1/4 c. chopped mozzarella
1 tsp. finely chopped basil or parsley
salt & pepper to taste
1 1/2 c. panko breadcrumbs, processed fine
2 eggs, slightly beaten
1 1/2 c. flour
vegetable oil for frying

With a small pairing knife remove the stems from the peppers as well as the seeds from inside. Pat them dry & begin to stuff. Put the Sausage, mozzarella & basil in a bowl, stir them together & stuff the peppers with the mixture.
Roll the peppers in the egg, then the flour back in the egg & finally the breadcrumbs.
Place the prepared peppers in the hot oil 375 F. degrees. Be careful not to crowd them in the pan. Remove them from the oil & place them in a paper towel to drain.
